Most dinner recipes are under 30 minutes with the exception of a few slow cooker meals that take longer but the hands on time to make them is still in the 20 minute time frame. Breakfasts and lunches are all under 15 minutes, with the exception of a few bakes that take 30-40 minutes to cook, but the hands on time is 10 minutes or less.

No, however most recipes have notes for substitutions if you want to make them dairy or gluten free. We would say they are light dairy, meaning on most days there's just a single serving of dairy for the day.
